The Client

Scotland’s oldest boarding school, Loretto is set in 85 acres of leafy campus just outside Edinburgh, and is the home to boarding and day pupils.

The Challenge

Before Thomas Franks Ltd.’s involvement, Loretto School’s culinary offerings were perceived as dated, seeking inspiration and support, to enhance both quality and delivery, Loretto desired a culinary transformation.

Our Approach

Collaboratively, we revamped the service, highlighting Scotland’s natural larder with new menus celebrating traditional Scottish produce and authentic global dishes. To enhance the team’s skills, we organised a week-long coaching experience at ten top locations. We also redesigned and restructured the restaurant, giving it a fresh identity and creating an inviting space for socialising and dining.

Results

The revitalised menus, redesigned restaurant space, and dedicated team training garnered widespread positive comments.
